HARVESTING & WINEMAKING

Our harvesting and winemaking method follows the best procedures for preserving the intrinsic quality of the grapes.

The harvest is strictly manual, carried out by expert winemakers capable of selecting the best grapes directly in the vineyard. A further selection occurs in the cellar. Harvest generally takes place at the end of August for white grapes and between mid and late September for red grapes.

For white wines, we perform soft pneumatic pressing, decant the free-run must at low temperature in an oxygen-free environment, followed by slow fermentation at 14° C. For red wines, destemming and crushing occur with fermentation at higher temperatures, strictly controlled at every step.

We use French oak vats and barriques for the maturation of the noble reds, and we take utmost care during bottling and subsequent storage in healthy, thermo-conditioned environments.

Winemaker and Agronomist

Federico Curtaz is an internationally renowned agronomist-oenologist of Aosta Valley origin, born in a small town at the foot of Monte Rosa. Federico was fascinated by the Piedmontese hills since his youth so much so that every summer he moved to his grandparents dedicating himself to the vineyards, from here, the passion that will lead him to study viticulture and oenology and then enter the fascinating world of wine obtaining awards of great prestige at national and international level.

Stefano Bartolomei

Agronomist

Graduated in Pisa and specialized in Montpelier, he is an agronomist with experience in viticulture, from planting to the management and organization of wineries. For over thirty years, he has been working in the vineyards dealing with the cultivation of native and international vines, but also with the rediscovery and evaluation of ancient varieties forgotten both in Italy and abroad. Passionate and always ready to deepen the subject through constant agronomic and oenological studies in every aspect, he believes in viticulture that respects the environment and is attentive to all the techniques of integrated, organic and biodynamic agriculture.

Paolo Caciorgna

Winemaker

Paolo Caciorgna is the famous winemaker of the Pepi Lignana labels of Fattoria il Casalone, of Tuscan origin he is known as the winemaker of the stars "he has collaborated with the company of Sting and the Bocelli family", as well as working for 25 years in the most important denominations of Italy, such as Brunello di Montalcino, Nobile di Montepulciano, Chianti Classico, Amarone, Greco di Tufo and Soave, one of the best wine-makers in Italy. For Paolo, the son of a farmer and wine producer in Casole d'Elsa (SI) where he contributes to the management of the Tenuta delle Macchie company, the profession of winemaker was in his DNA and this passion led him to become one of the most sought-after wine consultants. Known for his authentic wines and for his great sensitivity to the world of wine with the different territorial identities that make Italian wine production extraordinary, our winemaker has had the merit of creating some of the most acclaimed wines of the Peninsula.

Nicola Berti

Winemaker

Graduated in Viticulture and Oenology at the University of Florence, after his studies he perfected himself professionally at the school of the famous oenologist Paolo Caciorgna. Nicola consults mainly in Tuscany, in particular in important production areas such as Chianti Classico, Montalcino, San Gimignano and our Maremma. A profound connoisseur of Tuscan vines, which he also studies from a historical and cultural point of view, he has the merit of being a curious and meticulous wine man.
